Skinny Trick/Healthy Oatmeal Cookies

These have been my favorite healthy, go-to cookie ever since my sister invented the recipe. It's nothing too difficult, nor spectacular in the ways of ingredients or preparation. But they are soft, delicious, and also happen to be very low in fat, high in fiber, and just all around yummy.

Mimi's Healthy Oatmeal Cookies:

3 cups oats
2 mashed bananas
1 cup organic brown sugar
1 egg (or 2 egg whites)
1 cup whole wheat flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamin
1/2 tsp nutmeg
1 tsp vanilla

Bake at 375' for 8-9 min on an ungreased cookie sheet.

Enjoy for dessert or in the morning with coffee!

  4. I tried these last night. Took out the sugar and added a splash of almond syrup and chopped up dark chocolate. They come out almost like yummy breakfast scones!

  5. Hi :) I baked these the other day, but I had to head out just after they came out of the oven and when i came back home they were almost all gone! I almost didn't even get to try them my family thought they were so delicious! Definitely a keeper... Thanks for the recipe! :)

  6. I just tried this recipe again today. I took out the sugar and replaced it with about 1/2 cup (or less) of honey. I also added 1 & 1/2 cups of sweetened coconut flakes. YUM!

    1. Hi Erin, I'm not sure about calories, but they are about 2 weight watchers points per cookie. If you follow that method! Very good! Thanks for reading! xx

  11. Made these yesterday. Don't know what I did wrong. They were burning on the bottom and not quite done on the inside. Still good though. Son didn't like them at all! :-(
