Homemade Chicken Veggie Noodle Soup
I adapted this recipe here by omitting the pepper flakes & fennel, and replacing some of the fresh herbs and parmesan with what I already had on hand in the house. (Like grated parmesan.) The key to this recipe is boiling the chicken to create fresh broth, and adding in the lemon zest. Get creative! I replaced the spinach with zucchini this time because that's what I had. I'll try it different ways every time. Yum!
I usually serve with cornbread (pictured) but today I'm going to make my favorite banana bread! I'll post that recipe soon. (Warning, it is not a skinny trick. But it's the best you'll ever have. Promise.)
