Healthy Faux Fried BBQ Chicken

This recipe is a take on a classic Weight Watchers dish, using cornflake crumbs instead of crispy fried chicken skin. I simplified it, and used BBQ sauce (instead of honey mustard) to add extra zing. The hubs and the picky toddler devoured it. {Tip: For an extra skinny trick, serve with veggies, not rice!}
    1 lb boneless, skinless chicken breast
    1 cup cornflake cereal (crushed)
    1/8 tsp salt
    1/8 tsp pepper
    2/3 cup BBQ sauce (or any sauce of your choice, a lite dressing works better with calories too!)
    Combine BBQ sauce, salt, pepper in a bowl; place chicken inside and coat completely. In another bowl, crush cornflakes with spoon or hands. Dip the coated chicken into the crumbs and cover on both sides. 
    Coat a shallow pan with cooking spray and place chicken inside. Bake at 425°F for 15-20 min, until chicken in golden and no longer pink inside. 
    Serve with a drizzle of BBQ sauce on top.
